Franco Manca (Bermondsey Street)

The pizzas at Franco Manca are made from slow-rising sourdough and are baked in a wood burning 'tufae' brick oven made on site by specialist artisans from Naples. This oven produces a heat of about 500c (930f). The slow levitation and blast-cooking process locks in the flour's natural aroma and moisture giving a soft, easily digestible crust. As a result, the edge of the pizza (cornicione) is excellent and shouldn't be discarded. This system was originally developed by the Greek settlers who, in the 5th century BC founded Neapolis (New Town). They adapted a pre-existing baking tradition to develop this new ‘Pita’, which through experimentation, luck and linguistic distortions, became pizza.

Stayed here on the way to Cheltenham races. Lovely place, with very welcoming and attentive staff. Dinner was excellent and good value and the rooms are very comfortable with every you need. The only tweak I would make is a slightly more comfortable seating for before or after your meal but overall its was a great find and we will definitely stay and eat here again

Really nice pub, with candles around and an open fire, and the staff were lovely, but food awful! Haloumi burger was cold and the burger bun doughy and soggy. My linguine with meaballs was ok but only luke warm. Apple crumble looked more like a bowl of soup and had bits of plastic in it. The waiter said it was apple peel but we were not convinced! A shame, because its otherwise a very nice pub.
